Pumpkin Pasta Sauce -- You must try this fall dish!

It's been way too long since I posted!
I figured I would give you all a fall recipe before the season ends. Expect many more throughout November!
This sauce is super simple, healthy, delicious and totally fall inspired. It is very easy to adjust based on your taste but this is the way I like it. I hope you try it out and enjoy.
Ingredients
1 cup diced tomatoes
2 cups pumpkin puree
1 cup diced onion or 1 medium onion
3 cloves garlic
1 Tb parsley or sage
2 tsps Italian Seasoning
1/4 tsp crushed red pepper (optional)
1/8 tsp nutmeg (optional)
1 tsp sugar (to cancel some of the tartness of the pumpkin -- optional)
Salt and Pepper to taste
**Add 1/4 cup heavy cream for thicker consistency
**Use whole wheat pasta for an additional health benefit! I promise it tastes good :)
Directions
In a large skillet, sauté the diced tomatoes and onions over medium heat. Once soft, lower heat and add in garlic.
Stir in pumpkin puree. Add Italian seasoning, crushed red pepper, nutmeg, and sugar. Stir over medium heat until soft boil.
Add mixture to a food processor and puree until there are few lumps -- I like to keep my sauce a little lumpy to add more texture to the pasta. Transfer to a bowl, add salt and pepper to taste. Sprinkle parsley/sage for both aesthetics and additional flavoring.
Shave Parmesan cheese on top for enhanced, creamy flavor.
Serve warm and enjoy!!!
